Chicken Parm Pizza Style
First, add 1lb of ground chicken to a bowl with an egg, 3/4 cup bread crumbs, 1/2 cup Parm and salt, pepper, onion/garlic powder and paprika. Mix together.
Then, add plastic wrap to the inside of a cake pan then add your chicken mixture. Even out your chicken so it covers the cake pan and makes an even circle. Freeze for 2 hours until the chicken is hard.
Prepare your breading mixture. You’ll need one plate with 1 cup flour, a bowl with 2 scrambled eggs, and a plate with bread crumbs. Season all with salt and pepper.
Cover your chicken in flour, then egg and the breadcrumbs. This was a messy process because of the size of the chicken 😂
Next, heat up a pan of olive oil then add your breaded chicken to the hot oil. Cook on both sides until crispy and golden brown. Remove the chicken from the heat and put it on a paper towel to soak up any excess grease.
After, cook 1/2 lb of pasta in salted water until al dente. Save some pasta water. Then add 3 tbsp of butter, a dash of olive oil and 3 cloves of minced garlic to a pan. Cook until fragrant.
Then, add 1 cup of heavy cream and mix well. Season with salt, pepper and onion/ garlic powder. Add 2 tbsp of softened cream cheese and whisk together.
Add your cooked pasta, 3/4 cup Parm, parsley and pasta water as needed. Mix well until you have a creamy sauce.
Top your chicken with marinara sauce and mozzarella. Bake at 350 for 15 minutes then broil for a few additional minutes until the cheese is slightly browned.
Remove from the oven then top with parm cheese, basil, your creamy alfredo pasta and more parsley. Enjoy!!!
