Pink Sauce Mac & Cheese

1. Cook 1/2 lb pasta ( I used fusilli corti bucati) in salted water until al dente. Reserve 1/2 cup pasta water before straining.

2. Add 3 tbsp of butter and a dash of olive oil to a pan on medium heat.

3. Add 3 cloves of minced garlic and cook until fragrant.

4. Add 3 tbsp of tomato paste & mix. Cook until it turns a dark red then add 1 cup of your favorite tomato sauce.

5. Once simmering, add 3/4 cup of heavy cream. Mix and bring to a simmer.

6. Season with salt, pepper, onion/ garlic powder.

7. Add 1/2 cup cheddar, 1/2 cup mozzarella and 1/2 cup parmesan with a handful of fresh basil.

8. Mix then add your cooked pasta and a dash of pasta water.

9. Let it all cook together for a few mins then top with more parm and fresh basil! Enjoy :)
