Gorgonzola Gnocchi with Crispy Prosciutto

1. Rip or slice 5 pieces of prosciutto into small pieces.

2. Add olive oil to a pan and then your prosciutto. Cook until crispy on both sides.

3. Remove from the pan and add 2 tbsp of butter to the same pan with 3 cloves of minced garlic.

4. Once the garlic is fragrant, add 1 cup of heavy cream and cook until simmering.

5. Season with salt, pepper and garlic/ onion salt.

6. Add 4oz fresh Gorgonzola. Cut into small pieces. Let cook stirring occasionally until cheese is melted.

7. Cook 1lb gnocchi in salted water until al dente. (Gnocchi cooks fast so I like to save this until my sauce is already almost done)

8. Add your cooked gnocchi, 1/2 a cup of Parm and a dash of pasta water.

9. Let cook together for a few minutes. Chop up your crispy prosciutto.

10. Add crispy prosciutto to the top with Parm & enjoy!!
