Classic Alfredo (no cream)

1. Cook 3/4lb pasta until al dente in salted water. Save 1 cup of pasta water.

2. Add 6 tbsp of butter, cut into pieces, to a bowl. Add cooked pasta right to the butter once it’s al dente.

3. Add pasta water, and 1.5 cups of freshly grated Parmesan cheese.

4. Mix vigorously until a creamy sauce forms. Add more cheese if sauce is too liquidy and more pasta water if it is not creamy enough. I seasoned mine with salt & pepper.

5. Top with extra Parm and enjoy!
