Tomato Basil Vodka Sauce

1. Cook ½ lb pasta in salted water until al dente.

2. Add 2 tbsp of butter to a pan with a dash of olive oil.

3. Add 2 cloves minced garlic and 6oz cherry tomatoes. Sprinkle with salt and cook until soft. Smush tomatoes.

4. Add 3 tbsp tomato paste and cook for a minute or two.

5. Add 1 shot of vodka. I like Tito’s!

6. Add 1 cup heavy cream and mix until combined.

Let simmer for 5-7 minutes to burn the alcohol off. Season your dish. I used salt, pepper & red pepper flakes.

7. Add your cooked pasta, a dash of pasta water and ½ cup parmesan & fresh basil.

8. Cook for a few minutes and then top with extra Parmesan and fresh basil. Enjoy
