Tomato Ricotta Pasta

Directions:

1. Cook 1/2 lb pasta until al dente in salted water.

2. Add 1 tbsp of olive oil to a pan on medium heat with 10oz cherry tomatoes & two cloves minced garlic. 

3. Cook until tomatoes are tender and then smush them with a spoon and cook for a few more minutes.

4. Add 2 tbsp of tomato paste and mix.

5. Add 1 cup of heavy cream and mix well. When simmering, season your sauce.

6. Add cooked pasta and 1/2 cup ricotta cheese, mozzarella & basil with a dash of pasta water.

7. Cook together for a few minutes & top with Parmesan and enjoy!!
